Ingredients
Scale:
1 cup long-grain white rice
1 tablespoon Cajun seasoning
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
2 cups chicken broth
1 tablespoon olive oil
1/2 cup diced bell pepper
1/2 cup diced onion
1/2 cup frozen peas (optional)
Instructions
In a medium saucepan, heat the olive oil over medium heat.
Add the diced onion and bell pepper. Sauté for about 3-4 minutes until soft and fragrant.
Add the rice to the saucepan, stirring to coat it in the oil and vegetables. Cook for another 2 minutes.
Sprinkle the Cajun seasoning, garlic powder, onion powder, black pepper, and salt over the rice. Stir well to combine.
Pour in the chicken broth and bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 18-20 minutes.
If using, add the frozen peas during the final 5 minutes of cooking.
Once cooked, remove from heat, let it sit covered for another 5 minutes, then fluff with a fork.
