8 oz feta cheese, crumbled
1/2 cup ricotta cheese
1/2 cup fresh spinach, finely chopped
1/4 cup sun-dried tomatoes, chopped
1 teaspoon dried oregano
1/2 teaspoon garlic powder
8 sheets of phyllo dough, thawed
1/2 cup melted butter
1/4 cup honey
1/4 cup sweet chili sauce
1 tablespoon rice vinegar
Instructions
Preheat your oven to 375°F (190°C).
In a bowl, mix together the crumbled feta cheese, ricotta cheese, spinach, sun-dried tomatoes, oregano, and garlic powder. Stir until well combined.
Lay one sheet of phyllo dough on a clean surface. Brush it lightly with melted butter. Place a second sheet on top and repeat the brushing.
Place a generous tablespoon of the cheese mixture at one end of the phyllo dough. Fold the sides over the filling, then roll tightly from the filled end to the edge.
Place the rolled feta sticks seam side down on a baking sheet lined with parchment paper. Brush the tops with more melted butter. Bake for about 20-25 minutes, or until golden brown.
While the feta rolls are baking, combine honey, sweet chili sauce, and rice vinegar in a small saucepan over medium heat. Stir until warmed through.
