  1. Prepare the dipping sauce by combining the balsamic vinegar, olive oil, Italian seasoning, salt, and pepper in a small bowl. Whisk together until well blended and set aside.
  2. Fill a shallow dish with warm water. Take one rice paper sheet and submerge it in the water for about 10-15 seconds until it becomes soft and pliable. Remove it from the water and place it on a clean, flat surface.
  3. In the center of the softened rice paper, layer a few slices of fresh mozzarella, crumbled Italian sausage, spinach, roasted red peppers, black olives, cherry tomatoes, and basil. Be careful not to overfill.
  4. Fold the sides of the rice paper over the filling, then carefully roll it from the bottom up, tucking it in tightly. Repeat this process for the remaining rice paper sheets and filling ingredients.
  5. Once all rolls are prepared, slice each roll into bite-sized pieces for easy serving.
