  1. In a bowl, combine olive oil, lemon juice, dried oregano, salt, and pepper. Add the chicken breasts, ensuring they are well-coated with the marinade. Let them marinate for at least 30 minutes, or ideally up to 2 hours.
  2. Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken breasts for about 6-7 minutes per side, or until they reach an internal temperature of 165°F.
  3. In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, and a pinch of salt. Stir until well mixed and set aside in the refrigerator to chill for at least 15 minutes.
  4. After the chicken has rested for a few minutes, slice it into thin strips.
  5. Lay out the pita breads or tortillas, spread tzatziki sauce on each, then layer with sliced chicken, cherry tomatoes, lettuce, red onion, and feta cheese if using.
  6. Fold the sides of the pita or tortilla over the filling, then roll tightly from the bottom up. Cut in half if desired and serve immediately.
