A delicious and comforting meal that combines tender chicken bites sautéed in a rich garlic butter sauce, served over a creamy pasta.
Ingredients
Scale:
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
2 tablespoons olive oil
4 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon Italian seasoning
8 ounces fettuccine or your favorite pasta
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, chopped, for garnish
Instructions
In a large pot, bring salted water to a boil. Cook the pasta according to package instructions until al dente, typically about 8-10 minutes. Drain and set aside, reserving 1/2 cup of the pasta cooking water.
In a bowl, combine the chicken pieces with salt, black pepper, and garlic powder. Toss to coat evenly.
In a skillet over medium-high heat, heat the olive oil. Add the seasoned chicken in a single layer and cook for about 5-7 minutes, until golden brown and fully cooked.
Reduce heat to medium. Add the butter, minced garlic, and Italian seasoning to the skillet. Stir for 2-3 minutes until garlic is fragrant.
Pour in the heavy cream and bring to a gentle simmer. Stir in the Parmesan cheese until melted. If the sauce is too thick, add reserved pasta water until the desired consistency is reached.
Add the cooked pasta to the skillet, tossing to coat in the sauce and combine with the chicken. Cook for an additional 2 minutes.
Garnish with chopped parsley and serve warm. Optionally, sprinkle extra Parmesan cheese on top.
