Ingredients

- 2 pounds boneless, skinless chicken thighs
- 1/2 cup honey
- 1/4 cup soy sauce
- 1/4 cup ketchup
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- Green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- Place the boneless, skinless chicken thighs in the base of your crockpot.
- In a medium bowl, whisk together honey, soy sauce, ketchup, minced garlic, ground ginger, and rice vinegar until well combined.
- Pour the prepared honey garlic sauce over the chicken in the crockpot.
- Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, mix the cornstarch with 2 tablespoons of water until smooth and stir this mixture into the crockpot.
- Once cooked, use two forks to shred the chicken in the crockpot and stir to coat with the thickened sauce.
- Serve hot, garnished with sliced green onions and sesame seeds.
